RISE & SHINE; IT’S PANCAKE TIME!
While Shrove Tuesday is the optimal time to indulge in pancakes, in our household it’s almost a weekly event 😉
My kids LOVE pancakes, and over the years I’ve twiddled with various recipes to maximise the health benefits without compromising on taste. One of my favourite results is this recipe: Protein Pancakes; which trust me – you’ll not be saving for just once-a-year on Pancake Day!
A HEALTHIER TWIST ON A CLASSIC FAVOURITE
These fluffy, protein-packed pancakes are chockablock with goodness and full of flavour, making them the perfect breakfast, lunch or dinner option. They’re even great for a post-workout meal, and my kids often take them in their snack boxes to school. The versatility of these will have you making them again and again, and at less than 20 mins to prepare and cook, why wouldn’t you?! 🙂
Rich in protein and fibre (even more so if you serve with yoghurt & berries, which is my favourite way to have these), these fluffy delights will stabilise blood sugars, leaving you feeling fuller for longer, and are perfect to avoid the typical ‘carb crash’ an hour after eating.
Lower in refined carbs, low in sugar, and higher in fibre than usual pancake recipes, consider these supportive of digestive health, and bound to leave you feeling energised and satiated.

Protein Pancake Recipe

3/4 cup (60g) porridge oats

150g cottage cheese

1 egg

1/2 tsp baking powder

pinch of salt
-
zest of 1 lemon

1 tblsp water
To serve:
-
Berries
-
Greek yogurt
- Flaked or whole almonds
- Sprinkle of cinnamon and/or cocoa nibs
Process oats until fine. Add remainder ingredients and process until smooth, loosening with a splash of water or non-dairy milk if needed. The batter should be thick but pourable.
Optional: Fold through a handful of blueberries, reserving some to serve
Heat a drizzle of extra virgin olive oil or coconut oil, and cook pancakes for a few minutes on each side until lightly browned, using approximately two tablespoons of batter per pancake.
Serve with your chosen toppings.
