The BEST summer salad

MY Favourite SUMMER SIDE SALAD 

This is one of my all time favourite salads. It’s super easy to make, and packs a nutritional punch, supporting everything from hormone balance, to gut health, to bone strength. I personally love serving with homemade burgers (beet burgers, or chickpea & carrot are my favourites), and having leftovers topped with tinned tuna or salmon. Crunchy and satisfying, this summer salad is healthy and nutritious. Yum!

Not only is this recipe quick and easy to make, it’s also a bit of a superhero for our health. Rich in calcium, omega-3 fats, and vitamin K from cruciferous veggies, this lovely salad can help soothe joint aches and pains, thanks to its anti-inflammatory and anti-oxidant properties supporting bone health, as well as contributing to optimal bowel health thanks to its high fibre content.

Kaleslaw Recipe

  • 50g kale, roughly sliced (tough stalks removed)
  • 25 g red cabbage, roughly sliced
  • 1/2 carrot, grated
  • 1/2 red onion, finely sliced
  • 1 tblsp Dijon mustard
  • 1 tblsp Greek/coconut/plain yogurt
  • 1 tblsp apple cider vinegar
  • salt and pepper to taste
  • 1 tsp pumpkin seeds
  • 1 tsp sesame seeds

 

Whisk mustard, yogurt, and vinegar in a small bowl, seasoning to taste.  

Add remainder ingredients to a large bowl, and stir through dressing. Toss to combine.

Serve
